Ingredients

  • 1 tsp dried rosemary, finely crushed
  • 2 tbsp olive oil or avocado oil (avocado oil has a higher smoke point β€” perfect for cast iron searing!)
  • 2 tbsp unsalted butter

🌿 For the Herbed Steak Sauce

  • ΒΌ cup fresh flat-leaf parsley, finely chopped
  • 2 tbsp fresh chives, finely chopped
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme leaves
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • Β½ tsp sea salt
  • ΒΌ tsp black pepper
  • Pinch of red pepper flakes (optional β€” adds a beautiful subtle heat!)

Instructions

Step 1 β€” Bring to Room Temperature

Remove the tenderloin from the refrigerator at least 45–60 minutes before cooking and let it come to room temperature. This is one of the most important steps β€” a cold center means uneven cooking. Don’t skip it! ⏱️

Preheat your oven to 400Β°F. In a small bowl combine the crushed peppercorns, kosher salt, garlic powder, and dried rosemary.
