Ingredients

(Makes one 8-inch round cake โ€” 10 slices)

๐Ÿซ For the Cake

  • 4 oz unsweetened dark chocolate bar, finely chopped (quality matters here โ€” look for 85โ€“90% dark chocolate)
  • ยฝ cup unsalted butter, cut into pieces
  • ยพ cup granulated erythritol or monk fruit sweetener
  • 3 large eggs, room temperature
  • ยผ cup unsweetened Dutch-processed cocoa powder (Dutch-processed gives the richest, smoothest flavor)
  • 1 tsp vanilla extract
  • ยฝ tsp espresso powder (optional but highly recommended โ€” it deepens the chocolate flavor without tasting like coffee!)
  • ยผ tsp sea salt

๐Ÿซ For the Simple Chocolate Ganache Topping

  • ยฝ cup sugar free chocolate chips (Lily’s brand works beautifully)
  • ยผ cup heavy cream

Optional Garnish

  • Fresh berries โ€” raspberries, strawberries, or blackberries ๐Ÿ“
  • A dusting of powdered erythritol
  • A dollop of sugar free whipped cream

Instructions

Step 1 โ€” Prep

Preheat your oven to 350ยฐF. Grease an 8-inch round cake pan generously with butter or cooking spray and line the bottom with a parchment paper round. Set aside.

Step 2 โ€” Melt the Chocolate & Butter

Add the chopped dark chocolate and butter pieces to a large microwave-safe bowl. Microwave in 45-second intervals, stirring between each interval, until completely melted and smooth โ€” usually 2โ€“3 intervals. Alternatively, melt over a double boiler on the stovetop, stirring frequently. Set aside and allow to cool slightly for 5 minutes. โฑ๏ธ

Step 3 โ€” Add the Sweetener & Eggs

Stir the granulated sweetener into the warm chocolate mixture until well combined. Add the eggs one at a time, stirring well after each addition. The batter will thicken as you go โ€” this is exactly what you want! Add the vanilla extract and stir to combine.

Step 4 โ€” Add Cocoa Powder & Seasonings

Sift the cocoa powder over the chocolate mixture and stir until fully incorporated and smooth. Add the espresso powder and sea salt and stir until combined. The batter should be thick, glossy, and smell absolutely incredible at this point. ๐Ÿ˜„

Step 5 โ€” Bake

Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 20โ€“23 minutes โ€” until the edges are set and the top is just barely firm to the touch. The center should still have a very slight jiggle โ€” this is what gives the cake its perfect fudgy texture! Do NOT overbake. โฑ๏ธ

Step 6 โ€” Cool

Allow the cake to cool completely in the pan โ€” at least 45 minutes at room temperature. Then refrigerate for a minimum of 1 hour before adding the ganache. The cake will firm up beautifully as it cools and the flavor deepens significantly. This is one of those cakes that truly gets better as it sits!

Step 7 โ€” Make the Ganache

Heat the heavy cream in a microwave safe bowl until just steaming โ€” about 45 seconds. Pour the sugar free chocolate chips into the hot cream and let sit for 1 minute without stirring. Then stir slowly from the center outward until completely smooth and glossy. Allow to cool for 5 minutes before pouring over the chilled cake.

Step 8 โ€” Finish & Serve

Pour the ganache over the top of the cooled cake and spread gently with a spatula โ€” letting it drip naturally over the edges for a beautiful rustic finish. Garnish with fresh berries and a dusting of powdered erythritol for a stunning Easter presentation. Refrigerate for 20โ€“30 minutes to set the ganache before slicing and serving. ๐Ÿซ

Substitution Tips

Chocolate โ€” Always use a good quality unsweetened or 85โ€“90% dark chocolate bar rather than sugar free chocolate chips for the cake itself. Sugar free chips contain sweeteners that can make the batter too thick and affect the texture. Save the sugar free chips for the ganache topping where they work perfectly!

Sweetener โ€” Any granulated keto sweetener works here โ€” erythritol, monk fruit, or allulose. Allulose is actually the top pick for this recipe as it doesn’t crystallize when cool the way erythritol can, giving you a consistently smooth, fudgy texture straight from the fridge.

Butter โ€” Swap for refined coconut oil for a dairy free version. Use refined rather than unrefined to avoid a coconut flavor coming through in your chocolate cake.

Cocoa Powder โ€” Dutch-processed cocoa powder gives the richest, darkest, smoothest chocolate flavor and is highly recommended. If you only have natural cocoa powder it will still work โ€” the cake will just be slightly lighter in color and less intensely chocolatey.

Espresso Powder โ€” Completely optional but genuinely transformative. It doesn’t make the cake taste like coffee โ€” it just makes the chocolate taste more deeply chocolatey. If you don’t have it, substitute with a tablespoon of strong brewed coffee or simply leave it out entirely.

Heavy Cream for Ganache โ€” Full fat coconut cream works as a dairy free substitute for the ganache. Use the thick portion from the top of a chilled can of full fat coconut milk.

No Springform Pan? โ€” A regular 8-inch round cake pan lined with parchment works perfectly โ€” just make sure to let the cake cool completely before removing it from the pan!

Make Ahead & Storage Tips

Make Ahead: This cake is an absolute dream for make ahead entertaining โ€” it genuinely tastes better the next day as the flavors deepen and the texture becomes even more fudgy and rich. Bake up to 2 days in advance, add the ganache the day before serving, and refrigerate until ready to slice!

Refrigerator Storage: Store covered in the refrigerator for up to 4โ€“5 days. Press plastic wrap against any cut surfaces to prevent the cake from drying out. Slice just before serving for the cleanest, most beautiful presentation.

Freezer Storage: The unglazed cake freezes beautifully for up to 2 months. Wrap tightly in plastic wrap and place in a freezer bag. Thaw overnight in the refrigerator and add the ganache fresh before serving.

Serving from the Fridge: For the best texture serve the cake slightly chilled โ€” about 10โ€“15 minutes out of the refrigerator. Straight from the fridge it’s beautifully dense and fudgy โ€” at room temperature it softens slightly and becomes even more indulgent. Both ways are incredible! ๐Ÿซ

Serving Suggestions

๐Ÿซ On your Easter dessert table โ€” place on a cake stand and garnish with a pile of fresh raspberries or strawberries in the center for a stunning, naturally colored presentation ๐Ÿ“

๐Ÿซ With sugar free whipped cream โ€” a dollop of freshly whipped heavy cream alongside each slice adds a beautiful lightness to balance the richness of the cake

๐Ÿซ With keto ice cream โ€” serve warm with a scoop of sugar free vanilla ice cream for the ultimate indulgent dessert experience ๐Ÿจ

๐Ÿซ Alongside the Keto Lemon Cake โ€” the combination of rich chocolate and bright lemon on the Easter dessert table is an absolute showstopper โ€” and the color contrast is gorgeous! ๐Ÿ‹

๐Ÿซ As a late night treat โ€” keep a slice in the fridge and enjoy cold, straight from the fridge. Trust me on this one. ๐Ÿ˜„

Pro Tips for the Perfect Flourless Chocolate Cake

๐Ÿซ Quality chocolate makes all the difference โ€” this cake has very few ingredients so each one needs to shine. Splurge on good dark chocolate!

๐Ÿซ Don’t overbake โ€” the center should still have a slight jiggle when you pull it from the oven. It will firm up as it cools. Overbaking leads to a dry, crumbly texture instead of that perfect fudgy center

๐Ÿซ Room temperature eggs โ€” cold eggs can cause the melted chocolate to seize. Set your eggs out 30โ€“60 minutes before baking

๐Ÿซ Patience is everything โ€” allow the cake to cool completely before adding the ganache and refrigerate before slicing. We know it smells incredible but rushing this step is the #1 mistake home bakers make with flourless chocolate cake! โฑ๏ธ
